Skinny Carbonara

– 3/4 Bacon rashers sliced up
– 150g Diced chicken breast
– Pasta (enough for 2)
– 1 egg
– 200g Cream cheese (I used philadelphia light with garlic and herbs)
– 80g Peas

– Boil your pasta and peas
– While the pasta is boiling fry your chicken in a little bit of oil, once nearly cooked add in the bacon slices
– Drain the pasta and peas once cooked and add the chicken and bacon
– In a separate bowl whisk the egg and add the cream cheese, mix until you have a smooth sauce
– Add in to pot with all other ingredients and put back on a gentle heat to let the sauce thicken
– Serve up and enjoy!

Turkey, Red Pepper & Spinach Wrap


– One or 2 tortilla wraps depending how hungry you are
– 1 Packet of turkey breast sandwich meat
– 2 Laughing Cow Light triangles
– 1/2 Red pepper
– Handful of Spinach


– Divide turkey meat between each wrap
– Roast red peppers or leave them au natural depends how you like ‘eM
– Spread Laughing Cow cheese on each wrap, divide spinach and your red pepper and turkey and your done!

Chicken Noodles


– 1 clove of garlic chopped finely
– 1 spring onion sliced in to small rounds
– 1 chilli sliced finely (adjust to your tasty I like spice!)
– 1 chicken breast
– 1 pack of soba noodles
– Handful of bean sprouts
– Couple handfuls of spinach and any other veg you have in your fridge that needs used up


– Add sliced chicken, garlic, chilli, bean sprouts and spring onion to frying pan cook with 1 tbsp of oil
– Cook until chicken is golden brown
– Add your noodles, spinach and any other veg and cook for a further 3 minutes
– And you are done! Squeeze some lemon over the top for some extra bite if you wish
